Slow Steak and Peppers

Ingredients
  

  • 1 large onion sliced
  • 3 assorted bell peppers sliced
  • 2 lbs flank steak sliced into strips
  • 4 T coconut aminos
  • 4 T beef broth
  • 2 garlic cloves minced
  • 1 T rice vinegar
  • 1 t sesame oil
  • 1 t ground ginger
  • ½ t sea salt
  • ¼ t black pepper
  • 2 cups cooked cauliflower rice for serving if desired

Instructions
 

  • In a 4- to 6-quart slow cooker, add the onion, bell peppers, and flank steak.
  • In a small bowl, add the coconut aminos, beef broth, garlic, rice vinegar, sesame oil, ground ginger, sea salt, and black pepper. Pour the sauce over the beef and stir to combine.
  • Cover and cook on LOW for 7 hours or until meat is cooked through. Serve with cooked cauliflower rice, if desired.
