yellow onion chopped or 1 bunch of scallions cut into 1-inch sections

cup
of sliced mushrooms button, crimini, shitake, etc

cup
of cooked kasha
Salt and pepper to taste
Instructions
Add oil to skillet and sauté onions or scallions for about 5 minutes and then add mushrooms, stirring until golden brown and soft (about 10 minutes).
Add cooked kasha, mix well with onions and mushrooms.
Salt and pepper to taste.
