Simple Kasha with Onions and Mushrooms

Ingredients
  

  • 1-2 tablespoons of olive oil
  • 1 yellow onion chopped or 1 bunch of scallions cut into 1-inch sections
  • 1 cup of sliced mushrooms button, crimini, shitake, etc
  • 1 cup of cooked kasha
  • Salt and pepper to taste

Instructions
 

  • Add oil to skillet and sauté onions or scallions for about 5 minutes and then add mushrooms, stirring until golden brown and soft (about 10 minutes).
  • Add cooked kasha, mix well with onions and mushrooms.
  • Salt and pepper to taste.
