Ingredients
  

  • 2 T olive oil
  • 1 eggplant cubed (about 1 cup)
  • 1 cup cubed zucchini
  • 2 tomatoes cubed
  • 8 oz canned diced tomatoes
  • 1 onion diced
  • 1 bell pepper diced
  • 1 t sea salt
  • 1 t black pepper
  • ¼ cup chopped fresh parsley

Instructions
 

  • Grease a 4- to 6-quart slow cooker with the olive oil.
  • Place all ingredients, except the parsley, into the slow cooker and stir well.
  • Cook on LOW for 3½ to 4 hours, until the vegetables are tender.
  • Garnish with the parsley.
