Preheat Your Smoker or Oven: Set your smoker or oven to 250°F (120°C). If using an oven, a rack over a baking sheet may be used to allow fat to drip away from the pork belly cubes.
Season the Pork Belly: Season the pork belly cubes generously with salt and pepper. Ensure each piece is well-coated for the best flavor.
Cook the Pork Belly: Place the seasoned pork belly cubes onto the smoker rack or oven rack, leaving some space between them for even cooking. Smoke or bake at 250°F (120°C) for about 2-3 hours, or until the pork belly cubes are deeply golden and begin to crisp on the outside.
Make the Carnivore Glaze (Optional): While the pork belly cooks, mix together the melted beef tallow, apple cider vinegar, salt, and pepper in a bowl. This glaze will add an extra layer of flavor to the burnt ends.
Glaze and Continue Cooking: After 2-3 hours, if using the glaze, brush the pork belly cubes with the carnivore glaze, then return them to the smoker or oven. Increase the temperature to 350°F (175°C) and cook for an additional 1 hour, or until the outside is caramelized and the inside is tender.
Rest and Serve: Remove the pork belly burnt ends from the smoker or oven and let them rest for a few minutes before serving. They should be sticky, caramelized, and melt-in-your-mouth tender.
