Heat the animal fat in a frying pan over medium-high heat.
Season the lamb chops with salt and pepper on both sides.
Place the lamb chops in the frying pan and cook for 3-4 minutes per side, or until cooked through.
Remove the lamb chops from the frying pan and serve.
