Rinse the rabbit under cold water and set aside. Chop the bacon into bite size.
Heat the oil in a frying skillet over medium-high heat. Fry the bacon until all the pieces start to crisp. Sprinkle generously with the salt and pepper.
Transfer the bacon to your Slow Cooker.
Place the rabbit on top of bacon.
Top with the fresh herbs, and pour the water.
Cover the lid and cook on LOW for 8 hours, flipping the rabbit after 4 hours.
Remove the rabbit from the pot, remove the meat and discard the bones, and place meat on a serving plate.
Serve warm with bacon.
