Season the sirloin with salt, pepper, cumin, and paprika, and rub with olive oil.
In a skillet, heat the olive over medium-high heat, sear the steak for 5 to 6 minutes per side ( depending on the thickness until cooked through to desired doneness. Remove the steak from the skillet, and set aside to rest.
Slice the bell pepper into strips, Turn the skillet heat down to medium-low, and cook the peppers until soft and browned with the remaining salt and pepper,
Slice the cooked steak into strips. Return them to the skillet with the peppers, and turn the heat off.
Sprinkle the cheese over the ingredients so it melts slightly, serve hot.
