Salt to taste
Instructions
Heat oil in a pan over medium heat. Sauté finely chopped onion until the onion starts to brown. Add minced garlic and stir until heated through.
Mix the chicken breast, fire roasted tomatoes, sautéed onion, garlic and spices to a slow cooker.
Cover ingredients with chicken stock. Cover and set on high for 2 to 3 hours until chicken is tender.
Add the chopped bell pepper, heavy cream, cream cheese and shredded cheese. Cook for an additional 20 to 30 minutes.
Top it with fresh cilantro, sour cream, cabbage, or avocado and serve as optional toppings.
