Heat the oil in a large pan over medium-high heat.
Sear half of the ribs at a time, making sure to season both sides.
Place the short ribs into the slow cooker and cover with beef broth.
Using the same pan you used to sear the ribs. Add the remaining ingredients and bring to a boil. Cook until the onion is tender. Pour the mixture over the ribs in the crock pot.
Cover and cook on high for 4 to 6 hours.
Once the meat shreds easily with a fork, let cool and serve.
