Keto Simple “Baked” Pheasant (Instant Pot)

- 2 pheasant breasts
- 2 Tbsp ghee
- 1 spring onion only green parts, chopped
- 4 fennel bulbs trimmed and quartered
- 3 1/2 Tbsp lemon juice
- Salt and pepper to taste
Press the “Sauté” button to heat up your Instant Pot and add the ghee.
Season the pheasants with the salt and pepper, and sauté in Instant Pot from all sides.
Lock lid into place and set on the MANUAL setting for 25 minutes.
Release pressure naturally for 5 minutes, and quick-release remaining pressure.
Transfer pheasants with the rest of the ingredients to the serving plate.
Serve hot.
