Preheat oven to 350˚Melt the ghee in a large pan over medium-high heat. Add the spinach, apple cider vinegar, chili flakes, minced garlic, salt and pepper, stirring continuously.
Place the salmon fillets in a baking dish and season with remaining salt and pepper. Generously coat each fillet with the spinach mixture.
Bake for 15 minutes of until the salmon is cooked through.
