Preheat oven to 300˚Line a baking sheet with parchment paper.
In two bowls, separate the eggs. Beat egg whites with cream of tartar until stiff peaks form.
In a separate bowl, mix together egg yolks, spices/herbs of choice, and cream cheese.
Gently fold the yolk mixture into the egg whites (be careful not to break down the whites).
With a large spoon, scoop the batter into a round pile (about 6 to 10 incheon the baking sheet.
Bake for about 30 minutes or until slightly golden brown.
Remove from oven and allow to cool on a rack (flat bread will deflate slightly).
Store your Oopsie Flat Bread in a loosely lidded container or in the refrigerator until you are ready to use.
Lightly brush top of Oopsie bread with olive oil, and top with cheese and dark greens like spinach or arugula.
Broil in the oven until cheese is melted and flat bread is slightly browned.
