Put cauliflower, 1 tbsp butter, and 2 tbsp heavy whipping cream into a microwave-friendly bowl
Microwave the mixture for four minutes on high, mix, and then microwave for another 4 minutes
Stir the mixture until it’s creamy, and then add in the mozzarella cheese
Cook the bacon in a pan until it’s thoroughly cooked, remove the bacon, but not the grease
Place the garlic, onions, and leeks in the bacon grease, cook until soft
Combine the bacon, garlic, onions, leeks, and cauliflower mixture together
Melt the remaining butter in a pan
Place three eggs rings in the warmed pan and pour the new mixture into each
Cook for three minutes on each side
