Keto Low-Carb Pumpkin Soup

Ingredients
  

  • 3 cups of Romaine lettuce
  • 1 tbsp fresh parsley chopped
  • 2 ½ oz mozzarella cheese
  • 1 slice of Parma ham
  • 1 slice of salami
  • 2 canned artichokes hearts
  • ½ cup of canned roasted red peppers
  • ¼ cup sun dried tomatoes in oil
  • 3 tbsp olives
  • 1 tbsp of fresh basil
  • ½ red chili pepper finely chopped
  • ½ tsp of sea salt

Instructions
 

  • Chop or tear the lettuce into smaller pieces Put on plates or on a large platter Add the parsley.
  • Distribute the antipasto ingredients on top.
  • Add basil, finely chopped chili and salt in a mortar or a small bowl Crush with a wooden spoon or use the mortar and pestle Sprinkle over salad and drizzle with olive oil.
