Preheat a skillet over medium-high heat. Add ghee.
Season chicken with salt and pepper. When the ghee is hot, add chicken to the pan. Cook until browned on one side, about 6 minutes.
Turn chicken over, and add lemon slices to the pan. Continue cooking until almost cooked through, about 10 mins.
Add broccoli to the pan along with lemon juice and water. Cover pan with a lid and continue cooking until chicken is fully cooked. Remove from pan.
Return pan to the stove on medium heat. Add the riced cauliflower into the hot skillet, and cook until the rice is slightly browned and toasted.
Assemble each portion with sliced chicken, cooked broccoli, and cauliflower rice.
