Keto Lemon Chicken with Cauliflower Rice and Broccoli

Ingredients
  

  • 2 teaspoon ghee
  • 1 pound chicken breast
  • ¼ teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 lemon sliced
  • 1 tablespoon lemon juice
  • 1 tablespoon water
  • 1 ½ cups broccoli cut into florets
  • 1 ½ cups cauliflower riced (grated)

Instructions
 

  • Preheat a skillet over medium-high heat. Add ghee.
  • Season chicken with salt and pepper. When the ghee is hot, add chicken to the pan. Cook until browned on one side, about 6 minutes.
  • Turn chicken over, and add lemon slices to the pan. Continue cooking until almost cooked through, about 10 mins.
  • Add broccoli to the pan along with lemon juice and water. Cover pan with a lid and continue cooking until chicken is fully cooked. Remove from pan.
  • Return pan to the stove on medium heat. Add the riced cauliflower into the hot skillet, and cook until the rice is slightly browned and toasted.
  • Assemble each portion with sliced chicken, cooked broccoli, and cauliflower rice.
