Preheat your oven to 350 degrees F
Layer two 9 inch baking pans with parchment paper and greases the bottom
Take a bowl and beat in cream and Erythritol
Whisk in pineapple extract and vanilla essence
Add eggs one by one, while beating after every addition
Take another bowl and add almond flour, salt, cinnamon, gluten-free baking powder
Transfer the dry mix to egg and butter mix
Fold in grated carrots and 1 cup pecans, chopped
Pour the whole mixture into your greased baking pans and bake for 30-35 minutes
Let them cool for 10 minutes
Garnish with pecans and serve
