Keto Egg-Free Breakfast Hash

Ingredients
  

  • 3 sausage links chopped
  • 3 slices bacon chopped
  • 1/2 cup golden beets chopped
  • 1/4 cup red bell pepper diced
  • 1/4 cup red onion diced
  • 1 handful spinach
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 Tbsp Parsley dried
  • 1 oz. cheddar cheese shredded
  • 4 slices avocado for garnish

Instructions
 

  • Add the bacon to a large skillet on medium high heat. Cook for 5 minutes. You'll use the bacon grease for cooking the rest of the ingredients.
  • Add in the beets, peppers, and onions.
  • Cook 5-7 minutes stirring occasionally.
  • Add in the spinach and sausage. Add in seasonings and herbs.
  • Continue to cook another 3-5 minutes. Top with shredded cheese and turn off heat.
  • Serve warm and garnish with avocado.
