Keto Chicken Piccata with Broccoli & Spinach

Ingredients
  

  • 2-5 ounce boneless skinless chicken breasts
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • 2 teaspoons olive oil
  • 5 ounces broccoli cut into florets
  • 1 ounce spinach
  • 2 tablespoon butter
  • 1 teaspoon capers
  • Lemon 4 slices

Instructions
 

  • Prepare chicken breasts by butter flying them and pounding them flat. Season with salt, pepper, and garlic powder.
  • In a medium skillet, heat the olive oil over medium-high heat. Place the chicken in the pan and cook both sides until cooked through, about 4 minutes per side. Remove from pan and set aside.
  • Place the skillet back on the heat. Add the broccoli and cook for 3 minutes or until the broccoli becomes a little tender
  • Add the spinach and stir to wilt. Remove vegetables from the pan and set aside.
  • Return the skillet to the stove, over low heat. Add the butter, lemon slices, and capers. Cook for about 3 minutes until a sauce develops.
  • Return the chicken and vegetables to the skillet. Stir to coat everything in sauce. Serve hot.
