Prepare chicken breasts by butter flying them and pounding them flat. Season with salt, pepper, and garlic powder.
In a medium skillet, heat the olive oil over medium-high heat. Place the chicken in the pan and cook both sides until cooked through, about 4 minutes per side. Remove from pan and set aside.
Place the skillet back on the heat. Add the broccoli and cook for 3 minutes or until the broccoli becomes a little tender
Add the spinach and stir to wilt. Remove vegetables from the pan and set aside.
Return the skillet to the stove, over low heat. Add the butter, lemon slices, and capers. Cook for about 3 minutes until a sauce develops.
Return the chicken and vegetables to the skillet. Stir to coat everything in sauce. Serve hot.
