Add coconut cream, Erythritol, and salt to a pan.
Put it on the stove on medium heat and cook until it starts to boil.
Lower heat to low and cook for 2 minutes.
Remove from stove.
Take a bowl and add egg yolks, pour half of the coconut, mixture in it.
Pour the whole mixture into pan.
Cook for 2 minutes until thick .
Remove from stove.
Add vanilla, butter, stevia, and nutmeg to the bowl and stir.
Add Xanthan gum and stir.
Let it chill for 10-15 minutes.
Pour into serving glasses and enjoy!
