- ½ lb Italian pork sausage meat
- 1 T olive oil
- 1 sprig fresh basil plus additional for garnish
- 1 t Italian seasoning
- ½ t dried oregano
- ½ t garlic powder
- 1 large carrot diced
- 1 onion diced
- ½ zucchini diced
- 4 oz tomato sauce
- 1 cup vegetable stock
- 1 handful baby spinach
- Sea salt and black pepper to taste
Break the sausage into bite-size pieces. In a small skillet, heat the olive oil over medium heat. Add the sausage and cook until it is browned on all sides. Transfer the sausage to a 4- to 6-quart slow cooker.
Add the basil, Italian seasoning, oregano, garlic powder, carrot, onion, zucchini, tomato sauce, and vegetable stock. Cover and cook on LOW for 4 hours.
About 10 minutes before serving, add the spinach and season with sea salt and black pepper. Serve garnished with basil.
