In a medium bowl, combine the beef, mozzarella cheese, pepperoni, tomatoes, almond flour, chives, baking powder, garlic powder, oregano, and salt.
Add the eggs and use your hands to blend everything well. Chill for 10 minutes. Roll the meat into 1½-inch balls.
Line a slow cooker with parchment paper. Place some pizza sauce on a plate. Roll each ball into the pizza sauce to cover.
Place the bites on the parchment paper in the slow cooker, at least ½ inch away from each other.
Cover and cook on HIGH for 3½ hours. Flip the bites and brush them with more sauce on the tops. Sprinkle with the cheddar cheese. Cover and cook on HIGH for 30 minutes.
Serve the pizza bites warm with additional pizza sauce for dipping, if desired.
