Preheat a broiler to high.
In a small bowl, combine the oregano, black pepper, garlic, sea salt, and oil or tallow.
Place the steaks on the broiler pan, and brush both sides with the oil mixture.
Broil 2–3 inches from the heat source (usually the very top of the oven) for 7 minutes for medium-rare (8 minutes for medium). Remove from the oven and turn the steaks. Return to the oven and broil the other side for an additional 5 minutes for medium-rare (6 minutes for medium).
When the desired internal temperature is reached, remove the steaks from the oven, cover with foil, and let rest for 5 minutes. Serve with your favorite vegetable or side.
