Ingredients
  

  • 6 hard-boiled egg yolks
  • 1 cup cooked and finely chopped bacon about 225g before cooking
  • 1/4 cup beef tallow for frying (plus more if needed to adjust for pan size and batch frying)
  • Salt and pepper to taste optional, depending on the bacon's saltiness

  • Prepare Egg Yolks: Start by hard boiling your eggs, then cool them in ice water for easy peeling. Halve the eggs, and carefully remove the yolks. Place the yolks in a medium-sized mixing bowl.
  • Mash and Mix: Add the finely chopped, cooked bacon to the egg yolks. Mash and mix thoroughly until the mixture is homogeneous. You can season with a little salt and pepper if needed, but remember, the bacon already adds a salty flavor.
  • Form Croquettes: Using your hands, form the mixture into small balls or ovals, about the size of a golf ball. If the mixture is too crumbly, you can add an additional egg yolk or a bit of bacon fat to help it bind.
  • Heat Tallow: Heat the beef tallow in a frying pan over medium-high heat. You'll need enough tallow so that the croquettes can be at least halfway submerged when frying.
  • Fry Croquettes: Once the tallow is hot, carefully add the croquettes to the pan. Fry them until they're golden brown and crispy on all sides, turning them gently as needed. This should take about 3-4 minutes per side.
  • Drain: Remove the croquettes from the tallow and let them drain on a wire rack or a plate lined with paper towels to remove excess fat.
  • Serve: Enjoy the croquettes hot, as is, for a deliciously rich and satisfying carnivore snack.
