Beef Pork Rind Nachos

Ingredients
  

  • ½ lb grass-fed ground beef
  • 1 t paprika
  • ½ t garlic powder
  • ½ t ground cumin
  • ½ t onion powder
  • 4 t chili powder
  • Sea salt and black pepper to taste
  • 1 cup pork rinds
  • 1 cup grated cheddar cheese
  • 2 T unsweetened coconut cream
  • 1 t apple cider vinegar
  • 1 avocado pitted, peeled, and diced
  • 1 tomato diced
  • 1 jalapeño pepper seeded and sliced
  • 2 T lime juice

Instructions
 

  • Preheat the oven to 350°F.
  • In a bowl, add the beef, paprika, garlic powder, cumin, onion powder, chili powder, sea salt, and black pepper and mix to combine. In a skillet, add the beef mixture and cook over medium heat for 10 minutes, or until the meat is fully cooked through.
  • In a baking dish, layer the pork rinds, the cooked ground beef, and cheddar cheese. Transfer to the oven and cook for 10 minutes, or until the cheese is melted.
  • In a bowl, combine the coconut cream and apple cider vinegar. Top the nachos with the coconut cream mixture, avocado, tomato, and jalapeño. Sprinkle the nachos with the lime juice and serve immediately.
