Ingredients
  

  • cup olive oil
  • 4 T za'atar seasoning or 2
  • T dried thyme + 2 T dried oregano
  • 1 t sea salt
  • 8 3-oz chicken thighs
  • 1 lemon sliced
  • 1 red onion cut into 6-8 pieces
  • ½ cup fresh mint
  • 1 cup plain Greek yogurt

Instructions
 

  • In a small bowl, mix the olive oil, za'atar seasoning, and sea salt. Rub the chicken thighs with the za'atar mixture pieces around the chicken.
  • Cover and cook on LOW for 4 hours.
  • Garnish with the fresh mint. Serve with the yogurt.
