Teriyaki Salmon with Brown Rice

Ingredients
  

  • 4 salmon fillets 6 oz each
  • 1 1/2 cups brown rice
  • 3 cups water
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 2 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 2 green onions sliced
  • 1 tablespoon sesame seeds
  • 2 cups steamed broccoli

Instructions
 

  • Cook brown rice in water according to package directions.
  • In a small saucepan, combine soy sauce, honey, vinegar, sesame oil, garlic, and ginger.
  • Bring to a simmer and cook for 2 minutes.
  • Mix cornstarch with water and add to sauce to thicken.
  • Preheat oven to 400°F (200°C).
  • Place salmon on a baking sheet and brush with half the teriyaki sauce.
  • Bake for 12-15 minutes until fish flakes easily.
  • Serve salmon over brown rice with steamed broccoli.
  • Drizzle with remaining sauce and garnish with green onions and sesame seeds.
