Strawberries and Cream Popsicles

Ingredients
  

  • 1 can 13.5 oz full-fat coconut milk
  • 1 cup chopped fresh strawberries
  • 1 T fresh lemon juice
  • 2 T erythritol sweetener
  • 1 t monk fruit sweetener
  • 1 T gelatin

Instructions
 

  • In a blender, combine all ingredients and blend until smooth. Pour the mixture into 6 (3-ounce) popsicle molds and freeze until completely set, at least 4 hours or overnight. Store in the freezer for up to 2 weeks.
