- 1 can 13.5 oz full-fat coconut milk
- 1 cup chopped fresh strawberries
- 1 T fresh lemon juice
- 2 T erythritol sweetener
- 1 t monk fruit sweetener
- 1 T gelatin
In a blender, combine all ingredients and blend until smooth. Pour the mixture into 6 (3-ounce) popsicle molds and freeze until completely set, at least 4 hours or overnight. Store in the freezer for up to 2 weeks.
