Steak Quesadillas

Ingredients
  

  • 1 lb grass-fed sirloin steak sliced into thin strips
  • 1 t chili powder
  • 1 t paprika powder
  • 1 t ground cumin
  • Sea salt and black pepper to taste
  • 2 T avocado oil or olive oil divided
  • 1 green bell pepper sliced
  • 1 white onion sliced
  • 4 low-carb tortillas
  • ½ cup grated Monterey Jack Cheese
  • 4 T diced jalapeño pepper

Instructions
 

  • Season with chili powder, paprika, cumin, sea salt, and black pepper.
  • In a small skillet, heat 1 tablespoon of the oil over medium-high heat. Add the beef and cook until it is browned on all sides. Remove the beef from the skillet and set aside.
  • In the same skillet, add the remaining 1 tablespoon of the oil and heat over medium-high heat. Add the bell pepper and onion and sauté for 5 to 7 minutes, stirring often, until softened. Transfer the vegetables to a small bowl and set aside.
  • Reduce the heat to low. Place a tortilla into the same skillet and cook for 2 minutes. Flip the tortilla and add one quarter of the cheese. Add the ¼ of the steak strips, onion, and bell pepper on one half of the tortilla. Add 1 tablespoon of jalapeño pepper. Fold the tortilla and remove from the pan. Repeat with the remaining tortillas, cheese, meat, and vegetables.
