With clean dry hands, combine all the ingredients together in a large bowl. Be careful not to overmix the meat; stop when just combined.
Place the bowl into the fridge to chill for about 15 minutes.
Once chilled, divide the mixture into 4 equal parts on a baking sheet.
Divide to form into patties about 2½-inches wide.
Approximately 2 per serving.
At this point, you can refrigerate or freeze patties for later use.
Heat a cast iron skillet to high and fry the sausage patties 2 or 3 at a time until cooked through (about 4 minutes per side).
Place the cooked patties on a plate lined with paper towels to drain
