Keto Salmon Skewers

- 1 lb salmon fillet
- 1 T coconut aminos or tamari sauce
- 1 T apple cider vinegar
- 1 tsp fresh ginger minced
- 1 garlic clove minced
- 1 T extra-virgin olive oil
- Freshly ground pepper
- 1 small zucchini cut into ¼” slices
- Wooden skewers
Cut salmon into 12 chunks and thread onto presoaked wooden skewers, alternating chunks with zucchini slices. Place in a shallow dish.
Whisk together the coconut aminos, apple cider vinegar, ginger, garlic and olive oil with a grinding of fresh pepper. Pour over skewers, turning to coat. Marinate in the refrigerator for 30 minutes.
You can grill these salmon skewers on a BBQ pre-heated on medium-high or broil them in the oven (about 2 ½ minutes per side until the salmon is flaky and cooked through.
