Preheat oven to 450° F/225 C.
Grease shallow roasting pan with the lard and place beef in pan.
In a bowl, combine dried tarragon, savory, salt, pepper, and the oil. Rub mixture on all sides of beef.
Bake uncovered about 15 minutes.
Reduce oven temperature to 350°F/175Bake 30 to 40 minutes more.
When done, let rest for 15 minutes before slicing.
Garnish with tarragon sprigs.
