Keto Mock Potato Salad (with Turnip!)

Ingredients
  

  • 3 C cubed raw turnip, small cubes
  • 3 eggs, hard cooked
  • ¼ C green onion, thin slices
  • ½ C mayonnaise

Instructions
 

  • Boil turnip until it softens but isn’t mushy. Drain, cool then refrigerate
  • Boil eggs until hard (about 15 minutes for eggs that come straight from the fridge). Cool, then refrigerate.
  • When you are ready to make your salad, peel eggs and mash with a fork in a in a medium sized bowl.
  • Add cooked turnip, green onion slices and mayonnaise. Mix well. Garnish with a sprinkle of paprika before serving.
