Keto Mock Potato Salad (with Turnip!)

- 3 C cubed raw turnip, small cubes
- 3 eggs, hard cooked
- ¼ C green onion, thin slices
- ½ C mayonnaise
Boil turnip until it softens but isn’t mushy. Drain, cool then refrigerate
Boil eggs until hard (about 15 minutes for eggs that come straight from the fridge). Cool, then refrigerate.
When you are ready to make your salad, peel eggs and mash with a fork in a in a medium sized bowl.
Add cooked turnip, green onion slices and mayonnaise. Mix well. Garnish with a sprinkle of paprika before serving.
