- 1 tablespoon lemon juice
- 2 teaspoons lemon zest
- ½ cup unsweetened shredded coconut
- ½ teaspoon coconut extract
- 1-2 tablespoons stevia
In a bowl beat all ingredients and mix until well combined.
Line a baking sheet with parchment paper.
Using a cookie scoop, divide mixture equally into balls, placing about 1 inch apart on baking
sheet. Freeze for 2 hours and enjoy
