Ingredients
  

  • 3 eggs
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ red bell pepper diced
  • ½ ounce spinach roughly chopped
  • 4 leaves basil finely chopped
  • 2 teaspoons olive oil
  • 1/3 cup feta cheese crumbled

Instructions
 

  • In a bowl, whisk together the eggs, salt, and pepper.
  • Stir in the bell pepper, spinach, and basil.
  • In a medium skillet, heat the olive oil over medium heat. Pour in the egg mixture and continually stir the skillet until the eggs cook to your preferred doneness.
  • In the last few seconds of cooking, crumble the feta cheese over the eggs.
