Ingredients
  

  • 2 C spring green salad mix
  • 2 C romaine lettuce pieces
  • ¼ C red onion thin slices
  • ½ C cucumber medium dice
  • 5 cherry tomatoes halved
  • 1 avocado thin slices
  • 1/4 C extra-virgin olive oil
  • 2 T lemon juice

Instructions
 

  • Toss spring green mix and romaine lettuce together in a salad bowl
  • Sprinkle scallions, cucumber, tomato and avocado over-top.
  • Whisk olive oil and lemon juice until well blended and pour over salad
  • Toss and serve immediately.
