Keto Creamy Asparagus Soup

Ingredients
  

  • 1 lb asparagus, trimmed and chopped
  • 2 tbsp butter
  • 1/2 cup onion, chopped
  • 2 cups chicken stock
  • 1/4 Tsp pepper
  • 1/2 Tsp salt

Instructions
 

  • Begin by preparing your asparagus, by cutting into one-inch pieces
  • Set your instant pot to saute mode and when hot add the butter.
  • When the butter foams add in the onions and cook for 5-7 minutes or until softened.
  • Now add the asparagus and vegetable stock and bring to a boil before cooking on manual mode high pressure for 5 minutes.
  • When your pot beeps allow to natural pressure release for 10 minutes and then blend with a stick blender until you get a smooth soup.
  • Garnish and serve as desired.
