Keto Chicken Caesar with Boiled Egg and Avocado

Ingredients
  

For the salad…

  • 4 C mixed salad greens
  • ¼ C red onion thinly sliced
  • ½ avocado thin slices
  • 2 C diced chicken
  • 2 boiled eggs each quartered
  • 8 cherry tomatoes halved

For the dressing…

  • 2 cloves garlic finely minced.
  • 1 tsp anchovy paste optional
  • ½ tsp Worcestershire sauce.
  • 1 T fresh lemon juice
  • ½ tsp Dijon mustard.
  • ½ C mayonnaise.
  • Salt & Pepper to taste.

Instructions
 

  • Toss salad greens with onion and divide between four serving bowls. Arrange the remaining salad ingredients on top of the greens.
  • Whisk all the listed ingredients and thin with a bit of water if necessary. Drizzle over salad, toss and serve. You will have enough salad dressing (2 serving) leftover for side salads on another day.
