- 1 cup of almond flour
- Pinch of salt
- 1/8 teaspoon of gluten-free baking powder
- 1 whole egg
- 2 tablespoon coconut oil melted
- ½ cup of coconut milk
- 1/4 cup of fresh blueberries
Preheat your oven to 350 degrees F
Line a muffin tin with paper muffin cups
Add almond flour, salt, baking soda to a bowl and mix, keep it on the side
Take another bowl and add egg, coconut oil, coconut milk, and mix
Add mix to flour mix and gently combine until incorporated
Mix in blueberries and fill the cupcakes tins with batter
Bake for 20-25 minutes
