Ingredients
  

  • 1 tablespoon Olive Oil
  • 1 small onion (finely chopped)
  • 1 medium Green Pepper (finely chopped)
  • 1 clove Garlic (finely minced)
  • 1 lb Grass - Fed Ground Beef
  • 3 heaped tablespoons Tomato Paste
  • ½ cup Diced Tomatoes
  • 8 oz Beef Bone Broth
  • 1 ½ teaspoon Chili Powder
  • 1 teaspoon Cumin
  • 1 ½ teaspoon Salt
  • ½ teaspoon Pepper

Instructions
 

  • In a large stockpot or dutch oven, heat olive oil under medium heat. Add onions and bell peppers. Sautee for 1 - 2 minutes. Stir in garlic, salt, pepper, and spices.
  • Add ground beef and cook until browned. Stir in tomato paste, tomatoes, and broth.
  • Bring to a boil, then reduce heat to low. Cook for 20 - 25 minutes, stirring occasionally.
  • Top with cheese, sour cream, and avocado if desired.
