Ingredients
  

  • 1 can 15 oz. black beans, rinsed and drained
  • 1 can 15 oz. kidney beans, rinsed and drained
  • 1 can 15 oz. chickpeas, rinsed and drained
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • 1/2 red onion finely chopped
  • 1 cup fresh corn kernels or thawed if frozen
  • 1/4 cup fresh cilantro chopped

For the Dressing:

  • 1/4 cup olive oil
  • 2 Tbsp. lime juice
  • 1 Tbsp red wine vinegar
  • 1 Tsp honey or maple syrup for a vegan option
  • 1 garlic clove minced
  • 1/2 tsp cumin
  • Salt and pepper to taste

Instructions
 

  • In a large salad bowl, combine the black beans, kidney beans, chickpeas, red bell pepper, green bell pepper, red onion, corn, and cilantro. In a small bowl or jar, whisk together the olive oil, lime juice, red wine vinegar, honey, minced garlic, cumin, salt, and pepper to create the dressing.
  • Pour the dressing over the salad and toss gently to ensure all the ingredients are well coated.
  • Let the salad sit for at least 30 minutes in the refrigerator before serving to allow the flavors to meld together. Serve chilled or at room temperature.

Tip:

  • Feel free to add other vegetables or herbs such as diced tomatoes, avocado, or parsley, for additional flavors and textures. For an extra protein boost, add quinoa or diced grilled chicken.
