- 3 large ripe tomatoes cut into wedges
- 1 cucumber sliced into half-moons
- 1 red onion thinly sliced
- 1/2 cup Kalamata olives pitted
- 1 cup feta cheese crumbled
- 1/4 cup extra virgin olive oil
- 2 Tbsp red wine vinegar
- 1 tsp. dried oregano
- Salt and pepper to taste
- Fresh parsley chopped, for garnish
In a large salad bowl, combine the tomato wedges, cucumber slices, red onion slices, and Kalamata olives. Sprinkle the crumbled feta cheese over the top of the salad.
In a small bowl or jar, whisk together the extra virgin olive oil, red wine vinegar, dried oregano, salt, and pepper to create the dressing. Drizzle the dressing over the salad, tossing gently to ensure all the ingredients are well coated. Garnish with chopped fresh parsley before serving.
Tip:
For the best flavor, use ripe, in-season tomatoes and high-quality extra virgin olive oil. For a more substantial meal, add chopped grilled chicken or slices of grilled pita bread on the side.
