Preheat oven to 350 degrees and line a baking sheet with parchment paper
Blend all dry ingredients in a large mixing bowl
Melt butter and add to dry ingredients. Continue mixing as you add the honey and egg.
Mix until fully blended. Once dough forms, roll into ball and place on parchment paper in the fridge for 20 minutes.
Remove dough from fridge and between two pieces of parchment paper, roll dough out until it is about ⅛-¼ inches thick.
Use a cookie cutter to cut out circles for your whoopie pies. Place cutouts on the lined cookie sheet and continue rolling out and cutting out your circles until all the dough is used.
Place in preheated oven for 10 minutes.
Let whoopies cool completely before adding the frosting
Mix softened better in an hand mixer or standing mixer until fluffy. Add in the powdered sugar, vanilla, and milk and mix until blended.
Select your monster colors, and divide frosting into separate bowls before adding food coloring.
Spread frosting with a knife (or piping bag) on each half the whoopie, and add another whoopie on top.
Keep whoopies in fridge as frosting will soften at room temperature.
