Preheat your oven to 350°F and line a baking sheet with parchment paper.
In a large bowl, combine the almond flour, shredded cheddar cheese, nutritional yeast (if using), chipotle powder, garlic powder, and salt. Mix well to distribute the flavors evenly.
Add the egg to the dry ingredients. Mix until a dough forms. If the dough seems too dry, you can add a teaspoon of water at a time until it comes together. Place the dough between two sheets of parchment paper and roll out to about 1/8 inch thick. Remove the top sheet of parchment paper.
Using a pizza cutter or a sharp knife, cut the dough into small squares or desired shapes.
If using, sprinkle the tops of the crackers with sesame seeds or poppy seeds and lightly press them into the dough. Transfer the parchment paper with the cut dough onto the prepared baking sheet.
Bake in the preheated oven for 12-15 minutes, or until the edges of the crackers begin to brown slightly. Let the crackers cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. They will continue to crisp up as they cool.
