Ingredients
  

  • 2 T olive oil
  • 1 onion sliced
  • 1 lb skinless boneless chicken breasts, cut into strips
  • 3 medium red bell peppers sliced
  • 2 T paprika
  • 2 t garlic powder
  • 1 t chili powder
  • ½ t sea salt
  • ½ t black pepper
  • 2 T lime juice
  • Fresh cilantro for garnish
  • Lime wedges for garnish

Instructions
 

  • Grease a 4- to 6-quart slow cooker with the olive oil. Add the onion, chicken, and bell peppers. Season the mixture with the paprika, garlic powder, chili powder, sea salt, and black pepper. Drizzle with the lime juice and toss gently.
  • Cover and cook on LOW for 4 hours. Serve topped with fresh cilantro and lime wedges, if desired.
