Prepare Beef Cheeks: Season the beef cheeks generously with salt.
Place beef cheeks in a slow cooker. If you have a preferred method of adding flavor, such as smoking or incorporating carnivore diet-friendly seasonings, feel free to adapt this step accordingly. Cook on low for 8-10 hours or on high for 6 hours, until the meat is extremely tender and can be easily pulled apart.
Cook the Bacon: While the beef cheeks are nearing completion, cook the bacon slices until crispy. You can do this in a skillet over medium heat, in the oven at 400°F (200°C) on a baking sheet lined with parchment paper for 15-20 minutes, or until crispy, or use an air fryer if you have one.
Drain the bacon slices on paper towels to remove excess grease.
Pull Apart Beef Cheeks: Once the beef cheeks are cooked and tender, remove them from the slow cooker and let them cool slightly until they can be handled.
Using two forks, pull apart the beef cheeks into shredded pieces. Season with additional salt if needed.
Assemble the Sliders: Take one slice of crispy bacon, place a generous amount of pulled beef cheek on top, and then top with another slice of crispy bacon, creating a "slider".
Repeat with the remaining bacon and beef cheeks.
