Keto Creamy Shrimp with Zucchini Noodles

Ingredients
  

Sauce

  • 1 tbsp olive oil
  • ½ onion diced
  • 1 clove garlic minced
  • 1 teaspoon dried oregano
  • zest and juice of ½ lemon
  • 2 teaspoons tomato paste
  • 5 ounces cream cheese
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 5 ounces prawns cooked
  • 2 tablespoons basil chopped

Noodles

  • 1 tablespoon olive oil
  • 20 ounces zucchini noodles
  • 1 cup spinach raw
  • 2 tablespoons basil chopped

Instructions
 

  • Heat the olive oil in a large pan over a medium heat. Add the onion and garlic. Cook until softened, about 5 minutes.
  • Add the oregano, lemon zest and juice, and tomato paste to the pan. Stir to combine.
  • Add the cream cheese to the pan. Season with salt and pepper, and stir to combine until the cheese has melted and there is a thick sauce.
  • Add the prawns and the basil leaves to the sauce and simmer gently for a further 1 to 2 minutes until the prawns are warmed through.
  • In a second large pan, heat the olive oil over medium heat. Add the zucchini and cook gently for 1 to 2 minutes, until just starting to soften.
  • Once the zucchini begins to soften, add the spinach and stir through until just wilted. This will only take about a minute.
  • Drain the vegetables completely and spoon the sauce over the noodles. Garnish with chopped basil.
