Keto Simple “Baked” Pheasant (Instant Pot)

Ingredients
  

  • 2 pheasant breasts
  • 2 Tbsp ghee
  • 1 spring onion only green parts, chopped
  • 4 fennel bulbs trimmed and quartered
  • 3 1/2 Tbsp lemon juice
  • Salt and pepper to taste

Instructions
 

  • Press the “Sauté” button to heat up your Instant Pot and add the ghee.
  • Season the pheasants with the salt and pepper, and sauté in Instant Pot from all sides.
  • Lock lid into place and set on the MANUAL setting for 25 minutes.
  • Release pressure naturally for 5 minutes, and quick-release remaining pressure.
  • Transfer pheasants with the rest of the ingredients to the serving plate.
  • Serve hot.
