Keto Instant Warm Bok Choy Salad

Ingredients
  

  • 1 Tbsp macadamia oil
  • 1 lb Bok choy trimmed
  • 1 cup water
  • Salt and ground black pepper to taste
  • 1/4 cup garlic-infused olive oil
  • Lemon juice from one lemon freshly squeezed
  • 1 tsp sesame seeds

Instructions
 

  • Wash the Bok choy under cold water and scrub off any dirt.
  • Pour the macadamia oil in your Instant Pot cooker and place the Bok choy inside. Pour one cup or more water to just cover the stems.
  • Lock lid into place and set on the MANUAL setting for 5 minutes.
  • Pull out the leaves and stems with tongs, and put on a serving plate.
  • Season the salt and pepper and pour the olive oil. Sprinkle lemon juice and sesame seeds and serve.
