Keto Chicken with Squash “Spaghetti”

Ingredients
  

  • 1 lb spaghetti squash
  • 1 Tbsp avocado oil
  • Salt & ground pepper to taste
  • 1 lb chicken breasts bone-less, skinless, cubed i
  • 2 Tbsp garlic-infused olive oil

Instructions
 

  • Preheat oven to 400 F/200 C degrees.
  • Cut the spaghetti squash in half and remove the seeds with a spoon.
  • Season it with avocado oil, salt, and pepper.
  • Place the squash cut side down on baking sheet and bake until golden, 30-40 minutes.
  • Remove from the oven and let cook for 10 minutes.
  • Use a fork and scrape out “spaghetti.”
  • Heat the oil in a frying skillet over medium-high heat.
  • Add the chicken cubes, season with salt and pepper and cook for about 2-3 minutes on each side.
  • Add your chicken and “spaghetti” to a large bowl and stir.
  • Taste and adjust salt and pepper.
  • Serve.
