- 1 Tbsp. butter
- 3 large eggs
- 1/4 cup finely chopped green bell pepper
- 1/3 cup finely chopped onion
- 2 slices chopped cooked bacon
- Salt and pepper, to taste
1.) Cook bacon, peppers, and onions in a small skillet.
2.) In a small mixing bowl whisk eggs with salt and pepper. Set aside.
3.) In a small skillet heat butter over medium heat. Add the eggs, and
spread evenly. Allow eggs to cook a few minutes, while lifting the edges
to allow uncooked egg to run off the sides.
4.) Once the eggs are almost set, layer bacon, peppers, and onions over
half of the omelet, and fold over the other half. Cover and simmer for
